Black pepper from Madagascar

Finding ¡°piper nigrum¡± peppers, black or white, of good quality in Madagascar is not easy. The specialty of the country is green pepper, so the majority of the harvest is early when the pepper is immature, which forces our breeder to choose vines whose grains appear promising and to buy them on the vine to let them ripen and then repatriate them to Antananarivo in a workshop for drying in the sun and the various sorts. Harvested in the Tamatave region, these little black and wrinkled grains are extremely aromatic with warm and gourmet notes of brioche, pine nut and marshmallow.?
